Italian immigrants from the Campania and Naples areas of Italy brought this recipe to the United States. This soup contains a lot of herbs, meats, rice, and vegetables, which is why the name of the soup literally means, “married soup.” This refers to how all of these different ingredients blend together well. However, some people are confused as they think it should only be served at weddings.
Italian Broccoli Soup
With this recipe you will be able to serve four people some authentic Italian soup. They will find this soup to be very nutritious since it contains almonds, broccoli, and cream. For this quick and easy, yet tasty, recipe you will need:
- ¼ pound of broccoli
- ¼ ounce of slivered almonds
- 2 tablespoons of cream
- Salt and black pepper to taste
- Water as needed
Now that you have your ingredients, you will want to follow these steps to make the soup:
- Peel the stems off of the broccoli and chop them up into small pieces.
- Break up the broccoli florets.
- Boil the broccoli in just enough water to cover it for 10 minutes.
- Drain the broccoli but keep the cooking water.
- Blend the broccoli with some cooking water.
- Stir in the cream.
- Add enough water to make a thick soup.
- Crush the almonds into the paste then add it to the soup too.
- Season with enough pepper and salt to taste.
- Warm the soup and serve it.
