Common Herbs in Italian Recipes

It is the herbs that give Italian food its unique flavor. Here are some very common Italian herbs that are found in almost every Italian dish that is made:

  • Basil is a type of mint, which is why it is so fragrant whenever you pick it. However it will turn black whenever it is exposed to metal. This is why you will see most Italians simply tear it off and throw it directly into a sauce or onto a dish.
  • Oregano is most often used in tomato based pasta sauces as well as with meats.
  • Parsley, the flat-leaf type (aka Italian parsley), is often used as a garnish in addition to it being used as an ingredient.
  • Rosemary looks like a small evergreen tree branch. It is one of the most fragrant herbs and it will keep its flavor and its aroma whenever it is dried. Most Italians like to add this to their vegetables or cook it into the dough of breads such as focaccia.
  • Sage is a very fragrant herb that has long, broad leaves. It is the herb that is used to flavor the traditional Slatimbocca dish. You will want to make sure that you don’t use too much of it though as it can overwhelm your meal.
  • Thyme is another herb that belongs to the mint family but unlike the other herbs in this family its tiny leaves can easily be thrown into your meal. For this reason this herb is frequently used.
