Colorful Lasagna

Colorful LasagnaLasagna is a dish that dates back to Biblical times.  Today this pasta and cheese dish is found throughout Italy and made in the US.  Some people actually believe that Italian housewives who wanted to use leftover pasta and sauce invented this dish.  Regardless of who may have created it, this is one of Italy’s many favorite versatile recipes.  It can be made with ground beef, pork, ground Italian sausage, or a combination of any of them.  The sauce is traditionally a tomato sauce. A combination of smoked ham and creamed sauce is another variation to the traditional tomato sauce version of lasagna.  It is not traditional, but many people make chicken lasagna and use a white sauce, like Alfred sauce. Some cooks will also add a layer of spinach to their lasagna.

While there are some people who know how to make tomato sauce and noodles by scratch, after a buys day after work, you may want to avoid doing so.  Instead, you can simply use some sauce out of a jar with precooked or no cook pasta and pre-shredded cheese.  Once you begin to assemble your lasagna you will see that there is going to be a lot of sauce, which is good because it will moist and plump your noodles as your lasagna bakes.  After it’s done, it will taste great with a green salad and some breadsticks or garlic toast.

Ingredients

12 ounces of Italian sausage (cooked and drained) ~ OR ~ 1 12-ounce roll of pork sausage (cooked and drained)

1 10-ounce jar of tomato-basil sauce

1 12-ounce can tomato puree

24-ounce carton 1% cottage cheese with small curd or ricotta chees

1 large egg

1/3-cup egg substitute

1/2 cup Romano cheese (grated)

10-ounce package chopped frozen spinach (defrost and drain)

16-ounce package 2% milk Italian cheese like mozzarella (grated)

8-ounce package precooked lasagna

Preparation

You will want to preheat your oven to 375 degrees before you do anything else.  Now, combine your cooked sausage, tomato-basil sauce and tomato puree together in a large bowl.  In another large bowl you will want to combine together your cottage cheese, egg, egg substitute, Romano cheese and spinach.  Once you have your two bowls prepared you will want to coat a 9” x 13” glass pan with cooking spray because it is time to begin making your lasagna’s layers.  You can begin by spreading one cup of your sausage tomato sauce on the bottom of the pan.  Now lay four lasagna noodles over your sauce.  Spread 1/3 of your cottage cheese mixture over your lasagna, then 1/3 of your sausage tomato mixture over this cheese layer.  Continue in this way until you have three layers with your last layer being that of Italian cheese.  Make sure that you cover the lasagna with foil before placing it in your oven to bake for one hour.  After one hour you will want to remove the foil then place the lasagna back into the oven to cook for an additional 15 minutes.  Whenever you finally take your lasagna out of the oven, you will need to let it sit for between 10 and 12 minutes before you will be able to cut it into approximately 13 squares.  You can serve it with Parmesan cheese for anyone who may enjoy that.

With the spinach, the lasagna has the colors of the Italian flag, which are red, green, and white. The red and green are also traditional Christmas colors.

The great thing about making lasagna is that it can be prepared the night before and then put in the oven when you get home by work to cook while you take care of things around the house. Lasagna also freezes very well, so when you make one pan of lasagna, get enough ingredients to make a second one and put it in the freezer.
