Italian food doesn’t have to be difficult to prepare in order for it to be delicious. In fact, one of the easiest Italian foods to make is Crostini. It is a simple to prepare. In Italian “Crostini” means “little toasts,” which truly is a very accurate description. Crostini is actually small pieces of very thinly sliced bread that are toasted until they become crisp and then they are topped with a variety of different things. It has a different texture than a cracker, but has a similar crunch and can be used in some of the same ways that a cracker is.
Among Italians’ favorite things to put on top of Crostini includes chicken and liver pate, thin pieces of salami, and lardo di Colonnata (a type of cured pork fat). Of course, if you don’t have a lot of time to make a Crostini topping, you can simply coat it with a combination of olive oil, garlic, and sea salt. Oftentimes, this is exactly what you will find at a good, Italian bar, because Crostini tastes especially great when it’s served with Italian cabernet and either fig or pear chutney.
Here is a simple recipe for making Crostini and a unique tomato mint topping
Ingredients needed
½ Tablespoon chopped tarragon
Chopped mint leaves (this is strong, so use sparingly)
3 Tablespoons chopped flat leaf parsley
1 Tablespoon chopped capers
1 Chopped hardboiled egg
2 Chopped tomatoes (medium to large in size)
2.5 oz olive oil
1 Peeled clove of garlic
Salt and freshly ground black pepper
4 slices of rustic Italian bread
Preparation
Place all of your herbs, eggs and capers into a bowl. Add one tablespoon of olive oil and some salt to this mixture. Make sure that you mix this entire mixture together well. Put the tomatoes into a separate bowl and add your pepper as well as one tablespoon of olive oil. Toss everything together well. Put both of the bowls into the refrigerator for an hour to chill.
After an hour, toast your bread. The bread can be toasted in the oven by baking or broiling. When broiling, brush some olive oil on first and position low in oven so that it doesn’t burn and still toasts the center. Turn and broil other side. After toasting, rub it with garlic and drizzle with the remaining olive oil.
Remove the toppings from the refrigerator. Spread the egg mixture over the toasted bread and then top with chopped tomatoes.

This will go especially well with Prosecco, which is Italy’s version of champagne. It works especially well if you are looking for something simple, yet tasty, for your holiday toasts this holiday season.
